Oatmeal Cookies

Very quick and easy biscuits, great for when you receive unexpected visitors!

200 gr soft butter or margarine
4 tbsp sugar
200 ml oatmeal
250 ml flour

Put the oven to 200° or gas mark 5.
Whisk together the soft butter with the sugar. Add the oats and flour and stir to a smoot mix.
Roll the mix into little balls, approximately an inch in diameter, and place on a baking tray. Keep plenty of space between the balls as they will expand during baking. Then flatten the balls into biscuits with fork and bake in the oven for about 10 minutes, or until golden brown.

The First Week

The Shopping Basket is kicking off with this week’s tasty menu including Risotto, Meatballs and Salmon.
Our Risotto is a lot easier to make than you would ever imagine, it will be ready in about 30 minutes and turns out really creamy with a fab flavour of chicken and mushrooms.
For the meat lovers we have crispy bacon wrapped meatballs with a fresh garlic sauce and a super quick couscous.
Our third dish is a creamy tagliatelle with pan fried salmon, all done in the time it takes to boil the pasta.

Super Easy Sticky Chocolate Cake

Sticky chocolate cake

This cake is a big favourite of mine, and I make it nearly every week. It’s so quick and easy and tastes divine served warm with some whipped cream or ice cream!

Makes around 8 standard pieces.

300 ml sugar
2 eggs
2 tbsp cocoa powder
1 pinch salt
75 gr butter
200 ml flour

If you want, you can also add approximately 1 tsp vanilla sugar or vanilla extract.

Preheat the oven to 180°C or a gas mark 4.
Add the eggs to a bowl and mix in the sugar. Whisk this until fluffy.
Then add the salt and cocoa powder to the flour and mix them well.
Add the flour mix to the eggs and sugar and stir well.
Then melt the butter and stir into the mix.

Pour into a greased cake tin (or lined with greaseproof paper), approx 8 inches (20cm) in diameter. And bake in the lower end of the oven for about 35 min if you want it sticky in the middle, or a little longer if you want it more dry. Check the consistency of the cake with a toothpick before you take it out.

Homemade fresh breakfast bread

I made fresh bread this morning, my children and partner loves these, they are gone in no time.
They are very handy to make as they are left to rise over night.

Makes about 12 buns.
200°C for 15 minuts in the oven

650ml of plain flour
7g of dried yeast
1 tsp salt
250ml water
1tbsp olive oil

Mix flour, yeast and salt well add warm water and the olive oil and combine well. Mix into a dough and form the buns, leave to rise over night under a tea towel. Place in a preheated oven in the morning with a bowl of water as the steam will give a nice chewy crust.

Leave to chill for 10-15 minuts. Ready to enjoy with butter, jam and a cup of tea before off to work and school.
